Two sets of wheels for a giro.....one for touring, one for faster centuries...

I am not mechanically inclined(just ask my wife), and don’t talk bike gearing like I know what I’m talking about. So.....I want to run wider tires and lower gearing on my giro for touring and trails, and narrower tires and higher gearing(is that even correct or opposite??) for centuries done on pavement.

I’m looking for suggestions on what kind/brand of wheels and what gear numbers I should be looking for. Explain like you are talking to someone slow on the uptake, I won’t be offended. TIA. Bob
